The Classics in 3 Parts: Part 2 Burgers



Where do I begin? That morning, early, Mike and I picked up our CSA box from Garden of Eve at McCarren Park. It was much later that Deborah and I decided to make burgers for dinner. And it all came together from there. We wanted some serious comfort food. Obviously, we turned to The Meat Hook. We bought over 2 lbs of ground steak and were told just make patties, salt and pepper generously, let them sit on the counter seasoned for a bit before cooking, then cook in a dry pan. We did as told. And. Miraculous. No bread crumbs, no eggs, no onion, nothing. They were SO DELICIOUS!!! The meat is grassy, rich, textured, amazing. It doesn't NEED any help from anything or anyone.



Courtesy of the CSA box, we orchestrated our sides: 1) Roasted sweet potatoes and red potatoes with olive oil, salt, pepper, and rosemary. Honestly, who needs to fry potatoes when they taste so phenomenal like this!? 2) Grated carrot and red cabbage salad with shallot mustard vinaigrette, so gorgeous, so perfectly refreshing; 3) MAYONNAISE - yes mayonnaise, based on Julia Child's recipe. We made garlic mayonnaise to be exact. And we used an electric hand mixer - it worked like a charm. No more food processor mayonnaise for me.

Comforted and sated, this meal was a resounding success.
