Quinoa Chowder



Even dedicated carnivores will devour this chowder (read my recent pork chop post for proof) from Deborah Madison's Vegetarian Cooking for Everyone. It manages to be simultaneously light and hearty, as well as bursting with flavor, salty, savory, satisfying, and HEALTHY. When I made this back in April, nearly everything came from our CSA too, potatoes, spinach, eggs, and cilantro (!) - it was amazing.

I made this just two weeks ago! From the book you gave me, of course. It was much more flavorful than I had anticipated.
