Deborah Madison's Vegetarian Cooking for Everyone. It manages to be simultaneously light and hearty, as well as bursting with flavor, salty, savory, satisfying, and HEALTHY. When I made this back in April, nearly everything came from our
CSA too, potatoes, spinach, eggs, and cilantro (!) - it was amazing.
